Lime & Lemon Grass Cooler

Ingredients:
2 limes
1 small lemon grass stalk
3 tbsp caster sugar
4 ice cubes
125 ml/4 fl oz water
4 lime slices
soda water
To decorate egg white (ensure Lion mark)

Method:
To decorate the glasses, frost the rims. Pour a little egg white into a saucer. Dip the rim of each glass briefly into egg white and then into caster sugar.
Cut each lime into 8 pieces and coursely chop the lemon grass. Place the lime pieces and lemon grass in a blender or food processor with the sugar and ice cubes.
Add the water and process for a few seconds, but not until completely smooth.
Strain the mixture into the frosted glasses. Add a lime slice to each glass and top up to taste with soda water. Serve at once.
COOK'S TIP
It's important not to blend the limes for too long-a few seconds is enough to chop them finely and extract the juice. If you process to far, the drink will have a bitter flavour.
