Homemade Hughes Coleslaw

Simple family favourite. The secret is ensuring very finely sliced cabbage and full-fat mayo.

Prep Time: 15 minutes (+ rest for 4 hours in fridge)

Ingredients:

  • Savoy cabbage

  • Purple cabbage

  • 1 carrot, medium sized

  • Mayonnaise

  • Wholegrain Mustard

  • Cider Vinegar or Red Wine Vinegar

  • Black Peppercorn, freshly ground

  • White Pepper


Method:

  1. Remove 4-6 leaves from each of the cabbages. Remove the spines from leaves. Flatten and stack the leaves, to allow for easy slicing of very thin julienne strips of the cabbage. Place in deep bowl.

  2. Box grate the carrot. Add to bowl.

  3. Stir in a dash of Vinegar.

  4. Add a teaspoon of mustard.

  5. Add mayonnaise to cover. Mix well.

  6. Add freshly ground black peppercorn and/or ground white pepper to taste.


  • Consider optional additionals of onion (for a bite/heat), herbs (for colour and taste), etc. We keep it simple in the family.
