One-Pan Chicken with Spelt & Black Olives

Ingredients:
200g pearled spelt
4 chicken legs
2 red onions
150g black olives
Method:
Preheat the oven to 200C/180C fan/gas 6. Place the spelt in a bowl, cover with water and leave to soak for 10 minutes.
Meanwhile, heat 1 tbsp olive oil in a large ovenproof casserole over a medium-high heat. Season the chicken legs and fry skin-side down for 5 minutes until golden, then turn and fry on the flesh side for 1 minute.
Remove from the pan.
Add 2 sliced red onions and 2 sliced garlic cloves to the pan with a pinch of salt. Fry, stirring regularly, for 5 minutes until just turning golden.
Drain the spelt and stir into the pan. Add 500ml chicken stock and bring to a simmer. Place the chicken on top, skin-side up, and roast for 25 minutes.
Remove the pan from the oven and lift out the chicken. Stir the olives and juice of ½ lemon into the spelt. Return the chicken (still skin-side up) and roast for a final 20 minutes.
Stand for 10 minutes before serving.
