Hummus
Chickpea & Sesame Puree

Ingredients:
450g Chickpeas
7g Baking Soda
450g Tahina
300g Lemon Juice
15g Salt
8g Garlic, crushed (optional)
50g Olive Oil, for garnish (optional)
Method:
Clean and soak the chickpeas overnight. Clean once again and add fresh water and a little baking soda. Bring it to a boil and simmer until chickpeas are soft. Remove from heat and drain.
Mince twice until the mixture is very fine and put into the fridge to chill. Add Tahina, lemon, salt and garlic (optional) and blend well togther adding a little water. Put paste into food processor and blend until smooth.
Spoon mixture into Mezze bowl, flat plate or tray and garnish with parsley sprigs, olive oil (optional) and whole chickpeas.
