Spicy Cucumber and Spring Onion Salad
Packs a zingy punch with each mouthful and particularly good with Soy-Glazed Chicken.

Ingredients:
1 clove garlic, peeled and finely chopped
2 spring onions, peeled and finely sliced
1/2 a fresh red chilli, finely sliced
1 cucumber, roughly peeled
3 tbsp rice vinegar
1 tsp sesame oil
1 tsp fish sauce
1 tsp light soy sauce
1 tsp caster sugar
pinch of salt
Method:
Slice off the cucumber ends, quarter lengthways and scoop out the seeds with a teaspoon and discard. Slice cucumber in to long, angled strips about 0.5cm / 1/4 in thick.
Put in a bowl with the garlic, spring onions and red chilli.
In a separate bowl, mix the rice vinegar, sesame oil, fish sauce, light soy sauce, caster sugar and salt to make a dressing. Pour over the cucumber mixture and leave to sit for 2 minutes before serving.
