Sponge:
100g Butter
100g Caster Sugar
100g Self-raising Flour
2 Eggs
Zest of 1 Orange
1 tsp Vanilla Extract
100g Blackberries
Icing:
100g Icing Sugar
2 tbs Orange Juice
Method:
Pre-heat oven to 190C, Gas mark 5
Place cake ingredients (except blackberries) in a large bowl. Whisk to combine until pale in colour and creamy. Place blackberries in base of oven proof dish, pour mixture on top. Bake for 20 mins until risen and golden.
Mix icing ingredients. Drizzle over/ on
