Sicilian Roast Cauliflower (Draft - reverse engineering in progress)

A Sicilian lemon & herb rub creates a crisp glaze for the roasted cauliflower steak which is paired with a smoky Mediterranean style onion mash and griddled baby gem lettuce.

Ingredients:

For Lemon & Herb Rub (for Cauliflower)

  • Demerara Sugar

  • Salt

  • Herbs - Rosemary, Oregano, Parsley, Thyme

  • Dried Onion

  • Lemon Juice

  • Ground Black Pepper

  • Ground Pimento

  • Garlic

  • Red Bell Pepper

  • Birds Eye Chilli Powder

For the Smoky Mash Mix

  • Demerara Sugar

  • Roasted Garlic Granules

  • Oregano leaves

  • Craked White Pepper

  • Ground Cumin

  • Ground Oregano

  • Ground White Pepper

  • Roast Ground Cumin

  • Rapeseed Oil

For the Mediterranean Spice Mix

  • Garlic Powder

  • Onion Powder

  • Ground Paprika

  • Demerara Sugar

  • Ground Spices - Coriander, Black Pepper, Cumin)

  • Yeast Extract

  • Oak Smoked Sea Salt

  • Apple Cider Vinegar

  • Parsley

  • Paprika

  • Natural Flavouring?

  • Crushed Chilli


  • 1 cauliflower

  • 2 large potatoes, peeled and cut into chunks

  • 1 small red onion, finely sliced

  • 1 baby gem lettuce, quartered lengthways (keep root intact)

  • olive oil, knob of butter


Extras: Mixed olives, pitted.


Method:

Step 1: Cook the cauliflower and potatoes

Heat the oven to 200C / fan 180C / gas 6

  • Cut the cauliflower into 3cm thick slices. Rub two of the sturdy slices with oil and the Lemon & Herb Rub on both sides and place in a large baking tray and cook in the oven for 20 minutes. (The rest of the cauliflowr can be broken into florets, season, toss with oil and roast with the steaks).

  • Boil the potatoes in a pan of salted water until tender.

  • Mix the Mediterranean Spice Mix pot with 2 tbsp olive oil in a small glass. While the cauliflower and potatoes cook, move to Step 2.

Step 2. Fry the onions for the mash.

  • Heat a little oil in a frying pan over medium heat and cook the onions for 6-8 mins until golden.

  • Turn the heat down and add the Smoky Mash Mix. Gently fry for 2 mins, then tip out the onions and spices into a small bowl. Wipe the pan to use again in a minute.

Step 3. Prepare the charred lettuce

  • Drain the potatoes and mash them with butter, then mix in your spiced onions.

  • Heat a little oil in your frying pan over medium heat and cook the lttuce quarters for 2mins on each of the flat sides. Flip them over to cook their outer sides for 1 min, then turn off the heat. They should be golden on the flat sides and softened, but still have crunch.

Serve: the cauliflower with mash & charred baby gem lettuce. our the spicy drizzle over everything & serve with olives (optional)
