LEITH'S Salmon baked with a sweet and hot crust

SALMON makes for an excellent supper party dish. This recipe can be prepared a day in advance and then baked 15 minutes before you are ready to serve it. Serve with mashed or new potatoes and a green vegetable.

Serves: 4

Prep Time: 10 minutes

Cooking Time: 15 minutes

Ingredients:

4 x 6oz/170g salmon fillets, skinned and boned

Oil for brushing

For the crust:

1 tablespoon of demerara sugar

½ teaspoon dry English mustard

Finely grated zest of 2 limes or 2 small lemons

2 tablespoons grainy mustard

4 tablespoons dried breadcrumbs

Pinch of cayenne pepper


Method:

1. Preheat the oven to 190c/375f/ gas mark 5.

2. Mix together the crust ingredients.

3. Press over the salmon and place on a lightly oiled baking sheet, and bake in the oven for 15 minutes.
