Thai-style Sweetcorn Fritters

Ingredients:
55 g/2 oz plain flour
1 large egg
2 tsp Thai green curry paste
5 tbsp coconut milk
400 g/14 oz canned or frozen sweetcorn kernels
4 spring onions
1 tbsp chopped fresh coriander
1tbsp chopped fresh basil
salt and pepper
vegetable oil, for fring
To Serve
lime wedges
chilli relish
Method:
Place the flour, egg, curry paste, coconut milk and about half the sweetcorn kernels in a food processor and process until a smooth. thick batter forms.
Finely chop the spring onions and stir into the batter with the remaining sweetcorn, chopped coriander and basil Season well with salt and pepper.
Hest a small amount of oil in a wide, heavy-based frying pan. Drop in tablespoonfuls of the batter and cook for 2-3 minutes until golden brown. Turn them over and 4 cook for a further 2-3 minutes until golden. Fry in batches, making about 12-16 fritters in total, keeping the cooked fritters hot while you cook the remaining batter.
Serve the fritters hot, with lime wedges and a chilli relish.
COOK'S TIP
If you prefer to use fresh sweetcorn, strip the kennels from the cobs with a sharp knife, then cook in boiling water for about 4-5 minutes until just tender. Drain well before using as instructed.
