Baked Cod with a Curry Crust

Ingredients:
1/2 tsp sesame oil
4 pieces cod fillet, about 150 g/ 5 1/2 oz each
85 g/3 oz fresh white breadcrumbs
2 tbsp chopped blanched almonds
2 tsp Thai green curry paste
finely grated rind of lime
salt and pepper
boiled new potatues, to serve
lime sices and rind and mixed green leaves to garnish
Method:
Brush the sesame oil over the base of a wide, shallow ovenproof dish or tin, then place the pieces of cod in a single layer.
Mix together the fresh breadcrumbs, almonds, curry paste and grated lime rind, stirring well to blend thoroughly and evenly. Season to taste with salt and pepper.
Carefully spoon the crumb mixture over the fish pieces, pressing lightly to hold it in place.
Place the dish uncovered, in a preheated oven, 200°C/ 400°F/Gas Mark 6, and bake for 35-40 minutes until the fish is cooked through and tender and the crumb topping is golden brown.
Serve the dish hot, garnished with lime slices and rind and mixed green leaves and accompanied with boiled new potatoes.
COOK'S TIP
To test whether the fish is cooked through, use fork to pierce it in the thickest part-if the flesh is white all the way through and flakes apart easily, it is cooked sufficiently.
