Boiled Fruit Cake

Ingredients:
140g / 5 oz Margarine/Butter
140g / 5 oz Soft Brown Sugar
400g / 14 oz Mixed Fruit
1tsp Mixed Spice
185 g / 6.5 oz Water
285g / 10 oz Flour
2 Large Eggs
Method:
Add the first 5 ingredients together in a pan. Simmer for 20 minutes.
Cool. The add the flour and eggs. Mix well.
Bake in pre-heated oven at 150C for 1h 15 m to 1h 30 m until the skewer test (poke the skewer in the centre of the cake) comes out fairly clean, and with the understanding that the cake will be moist.
