Leek and Cabbage Soup

A recipe which is also known as Miners' Soup.

Ingredients:

2 pints chicken stock

6 leeks, washed, trimmed and cut into ½ inch rings

2 lb. cabbage, washed, trimmed of outer leaves and stalks and chopped into shreds

1 large onion, peeled and finely sliced

6 sprigs of fresh parsley, tied together with kitchen string

Salt

Black pepper

Grated cheese or chopped fresh parsley for garnish


Method:

Bring the stock to the boil in a large saucepan. Add the leeks, cabbage, onion and parsley and bring back to the boil. Cover and simmer for 40-50 minutes, stirring occasionally. Season to taste and remove the parsley sprigs. Spoon into four soup bowls, dividing the vegetables. and serve garnished with grated cheese or chopped parsley, as preferred and accompanied by crusty granary bread.
