A Sicilian lemon & herb rub creates a crisp glaze for the roasted cauliflower steak which is paired with a smoky Mediterranean style onion mash and griddled baby gem lettuce.
So simple and delicious with rhubarb or other seasonal fruit, plus a biscuit for dipping. The brandy, white wine and lemon infusion improves with time, so could be made in advance.
Lovely, old-fashioned self-saucing pudding - light sponge on top and lemony curd below. Suits a cold spring day. Ensure all ingredients are at room temperature before you begin.
