Lemon Trifle

Ingredients:

4 sponge cakes

3/4 cups sugar

2 cups cold water

rind & juice of 2 small lemons

1 tbsp cornflour

2 large eggs


Method:

Boil water, sugar, juice & rind. Add cornflour and boil until thick.

Take off the heat. Beat eggs and add to mixture.


Pour over sponges immediately.


Cool.


Layer sponges and cream. Decorate.
