Ingredients:
2 cups all-purpose flour 1½ cups sugar 1½ teaspoons baking powder
3/4 teaspoon baking soda
1 cup mashed ripe banana
½ cup buttermilk or sour milk
½ cup shortening
2 eggs
1 teaspoon vanilla
Oven 350°
Method:
In a bowl combine flour, sugar, baking powder, baking soda, and ½ teaspoon salt. Add banana, buttermilk, shortening, eggs, and vanilla. Beat with an electric mixer on low speed till combined. Beat on medium speed for 3 minutes.
Pour batter into 2 greased and floured 8x12 or 9x1½-inch round baking pans. Bake in a 350° oven for 30 to 35 minutes or till a toothpick comes out clean. Cool on racks for 10 minutes. Remove from pans; cool on racks.
