Fruity Flapjacks
If anyone knows fuel for fell races, it's the locals of Hutton. Try this homemade speciality for size.

Ingredients:
210g/7oz margarine, plus extra for greasing
120g/4oz Demerara cane sugar
450g/1lb oats
60g/2oz self-raising flour
240g/8oz jar mincemeat
Grated rind of an orange
60g/2oz syrup
Method:
In a large pan, melt margarine, syrup and sugar. When melted, add the mincemeat and orange rind. Mix together oats and flour, then stir into the mixture. Spoon into a greased baking tin and flatten with spoon or fingers. Bake for 25-30min at 180°C, until golden. Leave to cool and cut into squares while still warm. When cold, store in an airtight tin.
